Use our Roasted Tomato Salsa to simplify week-day meal preparation.

 

Chipotle Chick Fast Food

 

Prepare your favorite pasta.  We usually use linguine or fettuccine.

 

Select your favorite protein source.  This recipe works well with shrimp, scallops, or chicken.  We like to use the big sea scallops. 

 

Heat a skillet to medium high heat, then add a tablespoon or so of oil. In the case of scallops or shrimp, sear each side for 2 minutes, then remove from the skillet.  Chicken pieces would take a smidgen longer.

 

Pour an 8 oz. jar of the Chipotle Chicks’ Roasted Tomato Salsa into the hot skillet.  Allow this to heat through and thicken just a bit.  Add some whipping cream or sour cream to thin the salsa to a sauce-like consistency.

 

Plate up by placing your protein on a bed of pasta, then spooning the sauce over this.  Sprinkle some fresh cilantro on and serve.
